On January 3rd, I made a Berry Pancake Puff for the first time. I used frozen berries instead of fresh because that is what I had on hand. I think it turned out very good...even though I am not a fan of pancakes. It did not taste anything like a pancake. You could even eat it for dessert. Next time, I am going to omit the berries and drizzle maple syrup on the top. Oh, don't get me wrong, the berries were excellent. You have to try this because it is so easy to make. Here is the recipe:3 cups of fresh berries
1/3 cup of marmalade or a berry jam
3 tablespoons of butter melted, divided
1 cup milk
6 eggs
1 cup of flour
1/2 teaspoon of salt
2 tablespoons of powdered sugar
Preheat oven to 450 degrees. For the berry topping, gently stir together berries and marmalade/jam in a bowl; set aside. For the pancake, use a pastry brush to coat the deep dish baker or pie pan with a tablespoon of butter. In a bowl combine milk, eggs, and remaining 2 tablespoons of butter using a whisk. Slowly whisk in combined flour and salt until egg mixture is smooth. Pour batter in deep dish baker or pie pan and bake for 13 minutes. Reduce oven temperature to 350 degrees and continue baking for 15-17 minutes or until sides are crisp and golden brown. Remove pancake from oven and sprinkle with powdered sugar. Fill the center with berry topping. Cut into wedges and serve immediately.
*This recipe should be enough for 2 pie pans or 1 deep dish baker.

Jarrett turned 3 on the 6th. He really enjoyed this ice cream cake.

The firewood is dwindling down. Last week we had very low temperatures. Some nights it was below zero degrees and even the wind shield was -10 to -20 degrees. We had to stay indoors on Saturday and Sunday due to the wind shield. I do enjoy it when it is cold outside and warm inside. Winter is a time to slow down and to be home more often.
